The Catholic Defender: It is Finished"

"After this, aware that everything was now finished, in order that the scripture might be fulfilled, Jesus said, 'I thirst.' There was a vessel filled with common wine. So they put a sponge soaked in wine on a sprig of hyssop and put it up to his mouth. When Jesus had taken the wine, he said, 'It is finished.' And bowing his head, he handed over the spirit" (John 19:28-30).

Jesus fulfills the Passover and establishes a new Covenant so that all men might receive Him through the Eucharist. The fourth cup represents the lambs blood on the first Passover, a saving signal to the angel of death. Notice the hyssop branch was used to place the lambs blood on the door posts. The hyssop branch was again used to give Jesus the wine which represents the fourth cup. "It is finished" really is the beginning!
